Throughout the week, I try to eat fairly healthy and exercise regularly (more on that later), but I always like try out new recipes that are healthy yet delicious. As a result, I have found a ton of great recipes that are good for you and taste amazing! Dinner tonight was just that. I found a recipe for crispy ginger-and-garlic Asian turkey lettuce wraps (a mouthful, I know). Anyway, I have to say that they were delicious and I will definitely be making them in the future. On top of that, that they are super easy to make (about 15 minutes prep and 15 minutes cook). So, here are the ingredients, which make around 4-5 servings:
» 1/2 cup finely chopped carrots
» 1/2 cup water
» 1 (20-ounce) package of ground turkey
»1 cup chopped mushrooms
»3 garlic cloves
»2 tablespoons minced fresh ginger (I only used 1 tbsp)
»1/3 cup teriyaki sauce
»3 tablespoons creamy peanut butter
»1 tablespoon sesame oil (I didn’t have this so I didn’t include this)
»1 tablespoon rice vinegar
»1/4 cup hoisin sauce (optional, but I included it)
»1/2 cup sliced green onions
»1 head iceberg lettuce separated into leaves
I know it looks like a lot, but I promise it is a super easy and relatively quick process! Okay, so here are the actual steps for creating these yummy wraps:
» Cook carrots and the 1/2 cup water in a large nonstick skillet on high heat. Stir occasionally, every 3-5 minutes or until carrots are soft and water is evaporated. Remove carrots from skillet.
» Turn heat down to medium. Cook turkey in skillet for about 5 minutes, until it crumbles and is no longer pink. Add carrots, mushrooms, and next 8 ingredients in the list. Turn heat to medium-high. Stir constantly for about 4 minutes. Then add green onions, and cook and stir for an additional minute.
» Place meat in lettuce leaves and roll up.
And you’re done! This recipe it also great because even if you’re cooking for yourself, it’s an easy meal to save and have for lunch the next day.
